I’ve been sick for almost two weeks now. I don’t know if it’s RSV or Bronchitis or what. I’ve felt mostly fine aside form a sore throat in the mornings for the last 4 or 5 days or so except I get utterly exhausted around 3 pm at which point I get in bed, turn on season 5 of Gilmore Girls, and fall into a deep sleep that only an alarm clock with many snoozes will wake me from.
Last night I didn’t get out of bed until 7:30 pm. My husband had already given up on me and was eating dinner somewhere out in the neighborhood while he graded papers.
I shuffled to the enormously messy kitchen in my underwear and found the smashed little Persian cucumbers I had set to strain under a five-pound bag of fonio on an effortful whim earlier in the day. I gave them one more smush and then dumped them into a bowl.
I made a dressing loosely based on something I saw on the NYT Cooking app. Rice wine vinegar with salt and sugar dissolved in, some expired roasted sesame oil, mirin, tamari, a minced garlic clove, chili flake, and some Momofuku chili crisp. I tossed the cucumbers with it and put them in the fridge.
I microwaved last night’s white rice and then tossed that with rice vinegar and a splash of Tabasco. I added the smashed cucumbers on top and then covered the whole thing in lots of ebi furikake. I ate it in bed and went back to sleep at 8:30.
